  • 1 green bell pepper (about 1 cup), chopped
  • 2-3 cloves garlic, minced
  • 3 cups chicken stock
  • 1 tablespoon Creole seasoning (make your own—recipe below!)
  • 1 teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 2 bay leaves
  • 2 (15.5 oz.) cans red beans, drained and rinsed
  • 6 cups cooked rice

Here’s How:

  1. Heat oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, rendering that smoky, flavorful fat. Remove the sausage and set aside.
  2. In the same skillet, sauté the onion, celery, green bell pepper, and garlic until tender, about 5-7 minutes.
