It adds a subtle, natural sweetness and a hint of brightness that perfectly balances the earthy turmeric and spicy ginger.
It’s the kind of “chef’s secret” that will have your family asking, “What is that amazing flavor?” And you can just wink and say, “Oh, just a little Diva magic.” Or you can say “apple”, it’s up to you.
How to Make Golden Coconut Dal with Apple, Ginger, and Lime
This recipe moves fast, so have your “mise en place” (that’s just a fancy French way of saying “get all your stuff ready”) in place and ready to go before you turn on the heat.
What You’ll Need:
- 2 tablespoons coconut oil
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional, for my spicy Divas!)
- 1 medium sweet onion, finely chopped (about 1 cup)
- 1 orange or yellow bell pepper, finely chopped

- 2 teaspoons fresh turmeric, grated (or ½ teaspoon ground)
- 1 large Granny Smith apple, unpeeled, grated on the large holes of a box grater
- 1½ cups red lentils, rinsed
- 1 (13.5-ounce) can coconut milk
- 3 cups vegetable broth (or water if the budget is tight!)
- 2 cups fresh spinach, roughly chopped
- Zest and juice of 1 lime
- Kosher salt and freshly ground black pepper, to taste
- 4 cups cooked white or brown rice for serving
- For serving: plain yogurt, cilantro leaves, and extra lime wedges.
Here’s How:
- Bloom the Spices: Heat your coconut oil in a large pot over medium-low heat. Add the curry powder, cumin, black pepper, and cayenne. Stir them constantly for about 2 minutes. You want them to smell heavenly, not burnt!
- The Sauté: Add that finely chopped onion and cook for 5–7 minutes. We want it soft and just starting to caramelize (that’s where the flavor lives!). Stir in the bell pepper, garlic, ginger, and turmeric. Give it 2–3 more minutes until your kitchen smells like a dream.
- The Build: Stir in your grated apple and the rinsed lentils. Make sure every single lentil is coated in that gorgeous golden spice oil.
- The Simmer: Pour in the coconut milk and broth. Bring it to a gentle boil, then turn the heat down to low. Cover it up and let it simmer for 20–25 minutes. Stir it occasionally so nothing sticks to the bottom of the pan. You’re looking for the lentils to be very tender and the dal to be thick and luscious.
- The Finish: Stir in the spinach, lime zest, and lime juice. It only needs a minute or two for the spinach to wilt. Season it with salt and pepper to taste.
- The Reveal: Serve a big, beautiful ladle-full over a bed of fluffy rice. Top it with a dollop of yogurt, fresh cilantro, and one final squeeze of lime.

- 4 cups cooked white or brown rice
- For serving: plain yogurt cilantro leaves, lime wedges

- Add the onion and cook for 5–7 minutes, stirring occasionally, until softened and just beginning to caramelize. Stir in the bell pepper, garlic, ginger, and turmeric, and cook for another 2–3 minutes, until fragrant and slightly softened.
- Add the grated apple and lentils, stirring to coat everything in the spices. Pour in the coconut milk and vegetable broth. Increase heat and bring to a gentle boil.
- Reduce heat to low, cover, and simmer, stirring occasionally, for 20–25 minutes, until the lentils are very tender and the dal is thick and creamy.
- Stir in the spinach, lime zest, and lime juice. Cook for another 1–2 minutes, until the spinach is wilted. Season with salt and additional black pepper to taste.
- Serve warm with rice and top with yogurt, cilantro, and a squeeze of fresh lime.
