Buffalo Chicken Pizza Recipe: A Super Bowl Crowd-Pleaser

As we gear up for Super Bowl LVIII on February 9, 2025, it’s time to plan the ultimate game-day menu. Can’t decide between buffalo chicken wings or pizza? They both sound delicious. Why not combine the two for a mouthwatering mash-up that’s sure to be the MVP of your spread: Buffalo Chicken Pizza.

It’s got all the flavors and textures of buffalo chicken wings, but on a warm crusty pizza. What’s not to love?

The base is a rich and creamy, ranch infused white sauce. Topped with buffalo chicken that’s spicy and hot. And cheese, there has to be lots of cheese! Gooey mozzarella and piquant bleu cheeses. After the pizza bakes, we sprinkle it with green onion and diced celery for crunch. Then we finish with diced avocado that’s creamy, refreshing and cool. This is ridiculously good!

I’m all about finding frugal substitutions for expensive ingredients. So, let me explain the cottage cheese in this recipe.  Cottage cheese makes a great low-cost substitute for ricotta cheese. Once its puréed, it’s creamy and fluffy with texture very much like ricotta. I promise no one will suspect you’re sneaking cottage cheese into the pizza. By the way, this cottage cheese and ranch mixture makes a wonderful dip for veggies and chips, so you might want to make extra.


Buffalo Chicken Pizza Recipe

Yield: 12 slices
Time: 1 hour

What You Need:
  • 2 tablespoons butter
  • ¾ cup buffalo hot sauce (like Frank’s Red Hot)
  • 2 to 3 cups cooked chicken, diced
  • 1½ cups cottage cheese
  • ¾ cup ranch dressing
  • ½ teaspoon salt
  • 2 cups shredded mozzarella cheese, divided
  • 16 ounces pizza dough (store-bought or homemade)
  • 1 tablespoon olive oil
  • ½ small purple onion, thinly sliced
  • ⅓ cup crumbled bleu cheese
  • ¼ cup celery with leaves, chopped
  • ¼ cup green onion, sliced
  • ¼ cup avocado, diced
Here’s How:
  1. Preheat & Prep:
    Preheat your oven to 425°F. Allow the pizza dough to come to room temperature.
  2. Make the Buffalo Chicken:
    Melt the butter in a medium bowl. Stir in the hot sauce and set aside 2 tablespoons for drizzling later. Toss the diced chicken in the remaining sauce and set aside. (Feel free to sneak a bite—I won’t tell!)
  3. Prepare the White Sauce:
    In a food processor or blender, purée the cottage cheese, ranch dressing, salt, and ½ cup of the mozzarella until smooth. Give it a taste; it’s divine.
  4. Assemble the Pizza:
    Brush a 10x15x1-inch sheet pan with olive oil to help brown the crust. Stretch the dough to fit the pan evenly. Spread the cottage cheese mixture over the dough, leaving a 1-inch border around the edges.
  5. Add Toppings:
    Distribute the buffalo chicken evenly. Artfully arrange the onion slices on top, sprinkle with the remaining mozzarella, and finish with crumbled bleu cheese.
  6. Bake:
    Bake for 15 to 18 minutes, or until the crust is golden brown. Let the pizza cool for a few minutes.
  7. Finish & Serve:
    Sprinkle the baked pizza with green onion, celery, and diced avocado. Drizzle with the reserved hot sauce like a true artist. Slice, serve, and take a bow!

Customization Tips:

  • Not a fan of Bleu Cheese? Skip it or replace it with feta.
  • Spice Lover? Add extra hot sauce or red pepper flakes.
  • Vegetarian Option: Swap the chicken for cubed tofu or roasted cauliflower.
