RED VELVET WAFFLES WITH CREAM CHEESE MOUSSE AND BALSAMIC STRAWBERRIES

No one will guess you used shortcuts for this budget friendly, decadent treat. Red Velvet waffles with cream cheese mousse and strawberries. Perfect for Valentine’s Day breakfast, brunch or dessert.

CREAM CHEESE MOUSSE
- 8 ounces cream cheese at room temperature
- ¼ cup plus 1 tablespoon, powdered sugar divided
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
BALSAMIC STRAWBERRIES
- 1 pound fresh strawberries cleaned and sliced
- 1½ tablespoons balsamic vinegar
- 2 tablespoons sugar
- ¼ teaspoon almond extract
- Pinch each of kosher salt and freshly ground pepper
RED VELVET WAFFLES
- 1 boxed red velvet cake mix + ingredients on box
To make CREAM CHEESE MOUSSE
In a medium bowl using an electric mixer, beat cream cheese, ¼ cup powdered sugar and vanilla until light and fluffy.
In another medium bowl (you can use the same beaters, I won’t tell) beat the whipping cream with one tablespoon powdered sugar until peaks form.
Fold half the whipped cream into the cream cheese mixture until combined Follow with the remaining whipped cream and fold until combined. Cover and refrigerate.

Mix red velvet cake mix according to box instructions.
Pre-heat your waffle maker and spray with cooking spray.
Fill waffle maker with the appropriate amount of batter and bake according to your waffle maker’s instructions.
One cake mix made 14 waffles in my waffle maker, your maker may be different.
Diva Tip - If you have leftover waffles; freeze them and use your toaster to re-heat them.
