- 1 lime zest and juice
- ½ tablespoon honey
- ¼ teaspoon salt
- 3 cups mixed melon diced
- ¾ cup cucumber diced
- ½ cup any color bell pepper minced
- ¼ cup red onion minced
- 2 tablespoons cilantro chopped
- 1 small jalapeño pepper finely minced with ribs and seeds removed.
- Tortilla chips for serving
In a mixing bowl combine: the zest and juice of one lime, honey, and salt.
Add mixed melon, cucumber, bell pepper, red onion, cilantro,and jalapeño pepper, finely minced with ribs and seeds removed. Use cautionwhen working with jalapeño!
Gently mix and chill for at least 30 minutes.
Serve with your favorite chips, or over grilled chicken, or on fish tacos, in a grain bowl, or add to a green salad, just put it on everything!
