CUCUMBER-MINT REFRIGERATOR TEA

This crisp, refreshing tea feels special but costs verylittle. Brew it in the refrigerator, then add cucumber and mint once the teabags have been removed.

Ingredients
  

  • 8 black or green tea bags
  • 1 gallon cold water
  • ½ cucumber thinly sliced
  • ½ cup loosely packed fresh mint leaves
  • Ice for serving
  • Lemon or lime wedges optional

Instructions
 

  • Place the tea bags in a clean gallon-size pitcher or jar and add the cold water. Cover and refrigerate for 8 to 12 hours.
  • Remove the tea bags. Gently press or clap the mint leaves between your hands to release their aroma, then add them to the tea with the sliced cucumber.
  • Refrigerate for 1 to 2 hours to allow the flavors to mingle. Serve over ice with lemon or lime, if desired. Keep refrigerated and enjoy within three days.
