  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • teaspoons vanilla extract
  • cup all-purpose flour

Instructions
 

  • Cream the Base: In a large bowl, combine your chosen butter substitute and both sugars. Mix until well blended (note: some substitutes like applesauce or banana won’t cream like butter but will still combine well). Add the baking soda and salt, then beat for 2–3 minutes.
  • Incorporate the Wet Ingredients: Mix in the eggs one at a time, followed by the vanilla extract, until smooth.
  • Add the Flour: On low speed, gradually add the flour, about ½ cup at a time, until just combined. The dough will remain soft.
  • Refrigerate the Dough: Stir in your preferred mix-ins (e.g., chocolate chips, nuts, or dried fruit) by hand. Chill the dough for at least one hour to firm up.
  • Bake the Cookies: Preheat your oven to 375°F. Line cookie sheets with parchment paper. Drop heaping tablespoonfuls of dough onto the sheets, leaving 3 inches between cookies. Bake for 9–11 minutes, or until the edges are golden brown. Let cookies cool for 2 minutes on the sheet before transferring them to a cooling rack
